Most halwas drown the carrot in sugar and ghee. Ours doesn't. We start with two pounds of fresh grated carrots per batch, slow-cook them down with whole milk and a single cardamom pod, and finish with just enough ghee to gloss the spoon. The natural sugar in the carrots does most of the sweetening for us — we add only a fraction of what the traditional recipe calls for.

The result is a dessert that tastes like the original but reads like a snack: 85 calories, 3 grams of fiber, and a serious shot of beta-carotene per serving.
