Restaurant tikka masala is usually 60% cream by weight. Ours runs about 8%. We get the velvet texture from a slow-reduced tomato base and a small amount of cashew cream rather than dairy cream โ and the smoky depth from properly charring the paneer over open flame, which most kitchens skip.
The paneer is house-made daily, which means a higher protein density than the rubbery store-bought block most kitchens use.
